Wheat Berry Salad with Dried Apricots

WHEAT BERRY SALAD WITH DRIED APRICOTS
Fresh Ingredients

1 c. slivered fresh snow peas

1/4 c. chopped green onions

Storage Ingredients

3 c. cooked whole wheat berries

1 can garbanzo beans (15 oz.)

1/2 c. dried apricots, sliced

1/2 c. dried cranberries

3 Tbsp. toasted walnut oil

1 Tbsp. lemon juice

1/2 tsp. salt

1/2 tsp. pepper

Whisk together oil, lemon juice, salt, and pepper. Pour over all the other combined ingredients. Serve at once or cover and refrigerate up to 24 hours. Makes 8 side-dish servings.

I found this recipe in the February 2008 Better Homes and Gardens magazine. It was listed under the Healthy Category. I guess it won some sort of contest.

“My wife is always searching out new grains,” said winner Jamaine Batson of Salt Lake City. “This recipe gives wheat berries a nice light touch” said the judges.

Sounds good to me!

Fiesta wheat and bean salad/Salsa


FIESTA WHEAT AND BEAN SALAD
Fresh Ingredients

1 orange or red pepper, diced

1 green pepper, diced

1 small red onion, diced

1 bunch fresh cilantro, leaves chopped

1 small jalapeno pepper, cored and diced

juice of 1 lime

Storage Ingredients

3 c. cooked wheat berries

1 can corn, drained (16 oz.)

1 can black beans, drained (15 oz.)

2 tsp. chili powder

2 tsp. ground cumin

1/4 c. cider vinegar

1 T. sugar

1/2 c. vegetable oil

1 tsp. salt

Combine all ingredients in a bowl and toss well. Chill for at least 1 hour before serving.

Here it is friends. This is my all time, best, #1, very favorite way to use the wheat from my long-term storage. Whenever I give food storage presentations I always suggest/beg/insist that this salsa be served with chips. Experience has proven that even non-believers are converted once they taste wheat prepared this way.

Wheat Berry Dessert Salad

Use one cup of the cooked wheat berries with a container of low calorie cool whip, one can of crushed pineapple with the juice and one package of low fat vanilla pudding powder and you have a wheat berry salad that tastes like dessert.

Fiesta Chicken Pasta Salad


Fiesta Chicken Pasta Salad

1 pkg Hidden Valley Fiesta Ranch dip mix
½ c. oil
½ c. vinegar


1 lb cooked, shredded chicken (about 1 ½ to 2 breasts)
3/4 box garden rotini
1 can black beans
1 can black olives, halved
2 -3 tomatoes, chopped
Frozen corn

Mix dressing mix, oil, and vinegar in small bowl and set aside. Combine chicken, cooked pasta, beans, olives, and tomatoes in large bowl. Add dressing and frozen corn about 20 minutes before serving. Be sure to toss again just before serving, as the dressing will seep to the bottom.

Cafe Rio

I hope you enjoy dinner Cafe Rio Style as much as I do!

Sweet Pork

1-2 lb. pork tenderloin (I have used inexpensive pork carnitas also - available at Winco)

1 cup brown sugar

2 cups fresh salsa

Mix sugar and salsa, pour over pork. Cook in crock pot for 8 hrs. on low. When done shred with two forks and return to juice in crock pot and allow liquid to absorb. Serve with tortillas and all the fixins!

Green Chile Rice (Serves 6)

1 cup rice

2 cups chicken broth

4 oz. green chiles

1 sm. onion, diced

1/3 cup fresh cilantro

1 tsp. oregano

1/2 tsp. salt

1-2 tsp. cumin

3 green onions.

Mix together and pour into greased 9 x 13 pan. Bake in the oven for 1 hour or until rice is done at 350.

Cilantro Salad Dressing (This gets rave reviews everytime I serve it)

1 pkg. Hidden Valley Ranch Dressing (dry mix)

1 cup buttermilk

1/2- 1/3 bunch of cilantro, chopped

1/2 - 1 small jalapeno (remove seed)

1 cup mayo

1 tsp. lime juice

1-2 tomatillos (remove outer papery skin)

1 garlic clove

Blend all ingredients in blender!

Bajo Style Chicken

Awesome Bajio Style Chicken



5 chicken breasts
1/2 cup salsa
1 Tbsp cumin
1/2 cup brown sugar
1 4oz can diced green chilies
6oz Sprite (1/2 can)


Combine all ingredients in a crock pot. Cook on low for 5-6 hours. Remove chicken and shred. Return to crock pot and cook 1 more hour. Serve with flour tortillas, lettuce, cheese, black beans, and whatever other taco fixin's your family likes.
Notes:
-This chicken is not real spicy, so you could add some extra green chilies if you like your food with a little more kick.
-It has a lot of juice, so serve it with a slotted spoon.
-Bajio serves the chicken with caramelized onions, I think I might try that next time. Maybe. I don't know if I can handle any more yumminess.

caesar Chicken Pasta Salad


Caesar Chicken Pasta Salad


3 cups cooked/skinned shredded chicken breast
3 cups cooked penne pasta
2 cups thinly sliced romaine lettuce
1 1/2 cup cherry or grape tomatoes
1/2 cup thinly sliced fresh basil
1/2 cup chopped green onions
1/3 cup creamy Caesar dressing (I use poppy seed dressing)
1 garlic clove minced

combine all ingredients in a large bowl; toss well to
coat. Enjoy!

*in other similar recipes I have seen them use feta cheese as well.
