Ground Beef Cracked Wheat Casserole

1 lb. hamburger
1/2 onion or 2 tablespoons dried onion
1 teaspoon salt
1 teaspoon poultry seasoning
2 cups boiling water
3/4 cup cracked wheat, uncooked
1 can tomato soup
dash of pepper

Pour boiling water over cracked wheat. Brown onions and meat in a fry pan, using a little more fat if necessary. Add salt and pepper. Add soaked wheat. Add soup and poultry seasoning and mix thoroughly. Place in a greased casserole dish and bake at 325 degrees for 1 hour to 1 hour and 20 minutes.

Testing comment: My kids loved this. Next time I will double the recipe. Be sure not to drain the water off the wheat. It cooks out in the oven.

DESERET NEWS SPECIAL
Fresh Ingredients

2 lb. ground beef, or substitute 2 cups cooked whole wheat berries for one lb. of the meat

1 medium chopped onion


Storage Ingredients

1/4 c. vinegar

1/2 tsp. dry mustard

1/2 tsp. ground pepper

1 tsp. salt

1/2 c. catsup

1/2 tsp. brown sugar

1/2 tsp. garlic powder

1 can tomato paste (6 oz.)

1 can water

Brown beef with onion and drain fat. Add all the other ingredients and simmer for 30 minutes. Serve over hot rice and garnish with grated cheese, kidney beans, shredded lettuce or cabbage, diced celery, diced tomatoes, diced avocado, sour cream, and corn chips.

Crockpot Lasagna

Slow Cooker Lasagna
* 8 lasagna noodles, uncooked
* 1 lb. ground beef
* 1 tsp. Italian Seasoning
* 28 oz. jar spaghetti sauce (I made my own…click HERE to do the same)
* 1/3 cup water
* 4 oz. can mushrooms
* 15 oz. ricotta or 24 oz. cottage cheese
* 2 cups shredded mozzarella cheese

Preparation
1. Break noodles. Place half in bottom of greased slow cooker.

2. Brown ground beef. Drain. Stir in Italian seasoning. Spread half over noodles in slow cooker.

3. Layer half of sauce and water, half of mushrooms, half of ricotta or cottage cheese and half of mozzarella cheese over beef. Repeat layers.

4. Cover. Cook on low for 5 hours. (You can also double these ingredients and make 3 layers.)

Crockpot Stew

Mom's Stew
1 can minestrone soup
1 can tomato soup
1 can water
1 to 1 1/2 pounds stew meat
1 onion, chopped
3-4 carrots, thickly sliced
3-4 potatoes, cut into chunks
Salt and pepper to taste

Combine all in a crockpot. Cook on low for 8-10 hours or high 4-5 hours. Serves 4-6.

Beef Stroganoff


The Ultimate Beef Stroganoff
from Tami W.

Put in crock pot:
2-3 pounds stew meat
1 tsp. salt
dash of pepper
1 onion, sliced


Mix in a bowl and pour over meat:
¼ tsp. garlic salt
1 tablespoon Worcestershire sauce
1 ½ cups beef broth or stock (made up from cubes or granules)
1 tablespoon ketchup


Cook in crockpot on low for 7-8 hours or high for 4-5 hours. When cooked make a simple roux by whisking 1/3 cup flour with enough apple juice (about 5-6 tablespoons) to make a thick but still pourable flour mixture. Whisk the roux into the crockpot and add 4 ounces sliced mushrooms.


Cook on high for 15-30 minutes. Then stir in ½

Broccoli Beef


Broccoli Beef

¼ c. low sodium soy sauce (I just use regular)
1 T. chunky peanut butter
½ c. water
1 T. cornstarch
2 tsp vinegar
¼ tsp pepper
1/8 tsp powdered ginger
½ tsp garlic powder
½ tsp onion powder
2 T. oil
½ lb (or more) diced or cubed beef, chicken, or pork (I’ve tried pork chops & beef)
2 c. broccoli cut into small pieces
steamed rice

In a small bowl, combine the soy sauce, peanut butter, water, cornstarch, vinegar, pepper, ginger, garlic powder, and onion powder. Mix well and set aside. In large skillet or wok, heat the oil. Add beef and cook, stirring constantly, for 2-3 minutes. Add the broccoli, and cook for another 3-4 minutes (or until meat and broccoli are almost done), stirring constantly. Add the sauce and mix thoroughly, then continue to stir until the sauce thickens. Serve over steamed rice.

Crockpot Stew

Trade Secrets: This makes a VERY hearty and thick stew. If you want it a bit "soupier" add another can of water or a cup of beef broth or stock. Also, I use red potatoes and leave the skin on.

Frito Pie-Crockpot

Frito Pie

1/2 pound ground beef, browned and drained
2 (16 oz cans) pork and beans, pork removed
1 (4 oz can) chopped green chilies
1 (8 oz can) tomato sauce
4 to 6 drops Tabasco sauce (I leave this out)
1 bag (15 oz) Fritos Corn Chips

Combine all ingredients except chips in a greased 3 to 4 1/2 quart slow cooker. Cover and cook on low for 6-8 hours or high for 3-4 hours. Scoop over a handful of Fritos. Makes 6 - 8 servings (I think it makes more like 5 servings)
Serve with shredded lettuce, diced tomatoes, sour cream, and grated cheddar cheese.

Beef Taco's-Crockpot

5 lb. roast (cross rib or sirloin tip)
2 medium yellow onions, Sliced
1 (4oz.) can chopped green chilies
1/4 tsp garlic powder
2 tsp. salt
1/2 tsp. cumin
Juices from roast

Place roast in crock-pot the evening before your meal. Put onions on meat. Cover and set on medium and cook all night. (My crock-pot doesn’t have a medium - it’s old, a wedding gift, so I put it on low)

Remove roast the next morning. Put meat and juices in the fridge. The inside of my crock-pot is removable so I just put it in the refrigerator leaving the meat and juices inside.

Before dinner remove the fat and shred the meat and put back into the crock pot with juices and all other remaining ingredients, stirring occasionally over low heat

Would be great in burritos and enchiladas too!
